Vegan Brownies

Calling all vegans! I have been having a play around with vegan brownies because I love brownies, so I thought, why not make them vegan!?

I had a couple of attempts, and here is my final one. They were well received by friends and family while on a social distanced picnic, and Kurt basically ate them all in one go!

They are fudgy, gooey, moist and oh so chocolatey! Enjoy!

Prep Time; 20 mins Cooking Time; 30 mins

Ingredients;
140g plain flour
20g vegan cocoa powder
1/3 cup rapeseed oil
175g vegan dark chocolate
1 cup melted vegan margarine

1. Melt the vegan margarine and chocolate in a small bowl in the microwave, or in a saucepan on the hob.
2. Combine the dry ingredients in a medium bowl, then add the oil, chocolate and margarine. Mix until combined. This mixture will look unusually thin and runny, but that is normal.
3. Grease and line a rectangular or square tin and spread the mix evenly and place in the oven at 180°C for 30 minutes.
4. When you take it out the oven the mix will look runny still, which makes you think it’s unbaked, but it sets and gets that gooey, fudgy texture you want.

Enjoy!
