Apple Cinnamon Muffins
So we are now down to week 2 of lockdown. How’s everyone fairing up? It’s tough for all of us, but what is making things easier is how all of the communities are coming together. There are so many wonderful people helping the needy and I think it’s amazing. The support to local small businesses and farmers has improved I feel and as a farmers daughter myself, I hope the support of British farmers and small businesses does stick after this because they have been a god send to many people in this crisis!
As many of you know, baking is my hobby. My thing I know I can do well and be creative with and it helps me relax. I think many people now, are taking up baking as they have so much time on their hands. So I want to carry on sharing my recipes to those home bakers and share the love all round.
These muffins I made have been a hit in my house hold and they are using all store cup its ingredients! And for those vegans out there, they can also be made vegan! They are low in sugar and fat, so perfect if you are watching that waste line too!
Ingredients;
155g plain flour
1.5 tsp baking powder
1 tsp ground cinnamon
40g caster sugar
2 small eating apples, peeled and cored and cut into small pieces
1 egg (or if vegan baking, combine 1tsp baking soda with 1 tbsp vinegar)
4 tbsp olive oil spread
For the topping;
10 tsp soft brown sugar
1/2 tsp cinnamon
Method;
1. Combine caster sugar, egg/ egg substitute and olive oil spread together until well mixed.
2. Stir in the dry ingredients until cake mix is well combined, and then fold in the apple pieces.
3. Place 10 muffin cases into the muffin tins and evenly split the cake mix around the 10 muffin holes.
4. Combine the topping ingredients; soft brown sugar and 1/2 tsp cinnamon in a small bowl and spoon on about 1 teaspoon of the mix onto each muffin.
5. Place the muffins in the oven at 200°C and bake for 20-25 minutes until they spring back to the touch.
6. These muffins make for a great mid morning or afternoon snack, but also are great as a dessert severed with custard! Yummy!
