Sunday Springtime Chocolate Cake
Well we have made it through our first week of lock down. When I say made it, I felt like I nearly didn’t make it. It’s been a tough week, let’s just say. As it has been for so many people around the world. Everyone will truly be affected by this coronavirus, but the best thing to get through this is we all stick together, stay kind, and bake cake!
Mum went up to the allotment as part of her one day escape from the house, Kurt and I went for a dog walk as part of ours, and by that time, it was time for a cup of tea and cake! Today’s choice was chocolate cake! It definitely brightened up the mood in this house, so here is the recipe for all of my fans and readers, in the hope it also brightens up your household mood.
Ingredients;
3 medium eggs
175g caster sugar
125g self raising flour
175g baking margarine
50g cocoa powder
1/2 tsp baking powder
200g icing sugar
100g baking margarine
2tbsp cocoa powder
1. Cream the caster sugar and margarine together in a large bowl until light and fluffy.
2. Combine the flour, baking powder and cocoa powder in a separate bowl. Crack one egg into the creamed cake mix along with 2tbsp of the flour mix. Do this with the other two eggs until cake mix all combined.
3. With the remaining flour mix fold that into the the cake mix until you have a smooth cake mix.
4. Grease two round sandwich tins and place half the mixture into the two tins and spread evenly.
5. Place into the oven at 180°C and bake for 25-30mins until the sponge springs back when you press a finger onto it.
6. In a clean bowl mix the icing sugar, margarine and cocoa powder together to form the icing. If the icing seems a bit dry, add 1-2tsp milk to loosen it.
7. Once the cakes have cooled, spread 3/4 of the icing onto one of the cakes and spree evenly ready for the second one to go on top. Alternatively, use a piping bag and star piping nozzle and pipe stars onto the top of one of the cakes and then place the second on top.
8. Use the remainder of the icing to spread of pipe on to the top cake. I piped roses on top of the edge of the top cake for something different.
