Healthy Banana Lockdown Loaf
Is it just me or is everyone else going mad on this one trip outdoors a day thing? As I’m sure you all know I am a country girl through and through! But we all have to stick by the guidelines so this virus goes as quickly as it came! How have you all been using your one time a day to go outside? I have been doing my usual running, and it’s been even better as the sun has been shining!
I have been trying to stay healthy with also doing indoor home workouts, thanks to the amazing Fiton app! It’s saved me! But another thing I have also been keeping an eye on is my eating. And I have the perfect cake recipe here for you guys, if you need a sweet fix but want to stay healthy. This also helps with the current situation of struggling to be able to get caster sugar! Sugar-free Healthy Banana Loaf
Ingredients;
175g olive oil spread
2 large ripe bananas
100ml honey
3 eggs
150g muesli (I used Alpen)
175g self raising flour
Method;
1. Preheat the oven to 180°C and grease and line a load tin.
2. Place the spread and honey in a bowl and melt for a few seconds in the microwave until softened.
3. Mash the bananas (or if like me, I had some bananas in the freezer, so once defrosted they are soft enough to not bed mashing!) and place them in the bowl with the honey and spread mix. Mix together.
4. Add the remaining ingredients, eggs, muesli and flour. Mix until well combined.
5. Pour the mix into the loaf tin and bake for 40-50 minutes until golden brown and a skewer comes out clean.
6. Once baked, spread 2 teaspoons of honey onto the top for an extra boost of sweetness!
