Baking without scales

Hi all, sorry I have been silent of late. I have been busy enjoying life in New Zealand. Life is pretty sweet here for me, meeting new people and making new friends. Can’t say I am enjoying the weather though, the weather can’t seem to make up its mind. Cold and wet like winter one day and the next dry and sunny. Mad!

On Monday I was looking after a very cute 3 year old, and while he was taking his nap I decided to do some baking as a treat for him, his brother and his mum. But I found they had no scales, or they I could find anyway. Maybe I did a man look!? 😂 But, you know you can still make cupcakes without weighing scales? Didn’t know? See below and you’ll be all set!


Chocolate vanilla cupcakes

For the cakes;
1 cup soft margarine
1 cup caster sugar
1 cup self raising flour
2 tbsp cocoa powder
2 eggs
1/2 baking powder

For the icing;
1 cup soft margarine
2.5 cups icing sugar

Method;
1. Cream the margarine and sugar together until light and fluffy.
2. Add the flour to the cocoa powder. Add the eggs, one at a time to the creamy margarine and sugar mixture, with a spoon of flour and mix.
3. Once both eggs are added to the cake mix, fold in the remaining flour and cocoa powder.
4. Get some cupcake tins/ muffin trays and fill up as many as you can make with this mix. I made 16 mini muffins and 6 cupcakes.
5. Bake in the oven at 180°C for 20-25 minutes until baked. They should spring back up when you touch them to be baked. Or if in doubt, put a cocktail stick into the sponge and if it comes out clean, they are baked!
6. While the cakes are cooling, combine the icing ingredients together until smooth and creamy.
7. Grab a small plastic disposable piping bag and spoon the icing mix into it. Snip about 2cm off the bottom of the piping bag and decorate the cakes. I did swirls on top of the cakes but you can do why design you like. To finish off, add some pretty sprinkles.

Well I hope this makes more reason for you to bake if you don’t own a set of weighing scales for baking. Of course you can always change it up and instead of the cocoa powder use chocolate chips, raisins, cherries, blueberries or whatever takes your fancy!
