Crazy about cookies! Not so crazy about revision.
Cookies are so easy to make. And a winner all round. You can make them with anything in; gluten free or dairy free, ginger chunks or marzipan chunks, or plain old traditional, chocolate chips! Feeling like you need a sugar fix but don’t have much time, or energy to make a sweet treat? Here’s the answer you’ve been waiting for. Sometimes quick and simple IS best! It is especially best in my life at the moment, because incase you aren’t already aware, I’m training to become an accountant. I have my next exam in a few weeks so it’s fair to say revising is taking over my life. But what’s revision without baked goods? I use baking as my ‘break’ away from revision. The sugar fix I need to keep going, but the change of scenery and head space that I need to keep going to get that revision done and get that exam passed! I’m sure there are many of you out there in the same position as me, so do what I do. Take the time to treat yourself to sweet baked treats!
Today I’m baking...chocolate chunk and nut cookies...
Meg’s Cookies
150g butter or margarine
100g caster sugar
200g self raiding flour
100g chocolate chips/ ginger chunk/ marzipan chunks/ nuts/ dried fruit
1. Combine all the ingredients in a bowl and mix until it forms a large ball of cookie dough.
2. Place grease proof paper on two baking trays and using a dessert spoon, make balls of cookie dough and place on the trays.
3. With your fingers, gently push the pulls down to be flatter.
4. Bake in the oven at 180’C, for about 13-15 minutes until golden around the edge. Note; these will be very soft when they come out the oven and they will rock you into thinking they need longer oven time. They don’t! Any longer than 15 minutes and they will be hard!
