Jammy Dodgers
Jammy dodgers are an all round favourite. They remind me of my childhood, when my younger brother and I would come home from school starving and always have jammy dodgers. If we weren’t careful we’d eat a whole pack in on sitting! Naughty! But these home made ones really hit the spot, so easy and quick to make and you can even experiment with the jam filling!

Ingredients;
100g salted butter
175g caster sugar
200g plain flour
1 medium egg
9 teaspoons raspberry jam
Method;
1. Mix the butter (needs to be softened) and sugar together until light and fluffy.
2. Add the flour and egg and mix until a ball forms.
3. Use any large cutter you have (I like to mix it up using herts, and round ones). And cut out 18 biscuits.
4. Cut small holes in 9 of the biscuits, placing all the biscuits on baking trays lined with greasporoof paper.
5. Chill the biscuits in the fridge for 30 minutes, and meanwhile turn the oven to 190’C.
6. Once chilled, place the biscuits in the oven and bake for 10 minutes or until slightly golden on the edges.
7. Once the biscuits are baked and cooled, put a teaspoon of the jam onto the 9 biscuits without the holes in. Then assemble the biscuits adding the ones on top with the holes in.
