Gluten Free Mini Quiches

How many of you are coeliac? There are so many people with intolerances now. My cousins fiancĂ© being one of them. She hasn’t mastered the gluten free pastry yet, but I have. The best thing about this recipe is, unlike many other gluten free products out there, you can’t even tell these quiches are gluten free. So, coeliac or not, give them a go!


Makes about 16 quiches.


100g margarine or butter
200g gluten free self raising flour
2 rashers smoked bacon
1 small onion
2 eggs
200ml semi skimmed milk
100 grated cheddar
Seasoning

1. Make the pastry. Add the flour and margarine into a food processor and blitz until like fine breadcrumbs. Add enough water so the ingredients are combined and it forms a soft moist dough.
2. Cut out enough large circles of pastry to line 16 bun cases. Prick each pie case once with a fork.
3. Bake in the oven at 180’C for 12-15 minutes until part baked.
4. While the pastry cases cook, cut the bacon into small pieces and fry until cooked.
5. Set the bacon aside, and chop the onion finely and fry until cooked.
6. Divide the bacon, onion and grated cheese between each of the pies.
7. Whisk the egg, milk and some seasoning together in a jug. Then divide between thepaatry cases.
8. Put the mini quiches back into the oven and cook for 20- 25 minutes, until set and golden.
